Cinnamon

Found in the inner bark of an evergreen tree, cinnamon is believed to originate from Sri Lanka. The bark of the tree can be dried into cinnamon sticks or ground into cinnamon powder. We offer cinnamons with a volatile oil range of 1.5 V.O. to 4.0 V.O.

Korintji – “Thick Quill Cinnamon” comes from the cinnamomum cassia in Indonesia. Grown at higher altitudes than other cassia, Korintji has a sharper flavor and is a strong reddish-brown in color. Our Korintji cinnamon ranges from 1.5 V.O. to 3.0 V.O.

Saigon Cinnamon – Produced in northern central Vietnam, Saigon cinnamon is known for its pungent aroma. Often considered the highest quality cinnamon, it is produced from cinnamomum loureiroi and is a sweeter cinnamon. Our Saigon cinnamon ranges from 4.0 V.O. to 5.0 V.O.

Ceylon Cinnamon – Also known as “True Cinnamon,” Ceylon is made from cinnamomum verum and grown in Sri Lanka. It is tan in color and has a very mild cinnamon taste. No Volatile Oils.
